My Quick & Easy Go To Recipes

Prior to moving out and living on my own, I hardly ever cooked, or even helped my parents cook! It's not even that I disliked cooking, meals were just normally always provided by my parents. I had no choice but to actually start cooking in 2017. To my surprise, I really enjoyed it and I'm not half bad at it if I say so myself. Did I undercook chicken and almost poison me and my partner my first time cooking, yes.. but it's only gone uphill from there! Something about cooking for yourself and your significant other is enjoyable and comforting. I do the cooking, he does the dishes. I haaaate washing dishes. That's fair, right?

I now follow quite a few food/recipe bloggers (is that what they're called?) and their delicious food photos are all over my IG feed; I love it! Once I see something yummy, I'm pretty set on making it, so I save it on IG and refer to it later when I'm dinner planning. Although I enjoy trying new recipes, I do have a few go-to recipes that I love and wanted to share with you! Click the recipe name/title and it'll take you directly to the website.




These recipes aren't exactly, "healthy," so go look elsewhere if you're wanting strictly healthy recipes

+ One Pot Cajun Chicken Pasta Oh-em-gee, this one is so simple and yummy! Gotta love that it's a "one pot" recipe. Means he has less to clean up! Pasta, chicken, sundried tomatoes and a creamy, somewhat spicy Cajun sauce provides a lot of flavor. I have tried both making my own Cajun seasoning (just Google "Cajun seasoning recipe," and you likely have most of the spices in your cabinet) and have used a pre-made one; I personally like the way it tasted when I made my own Cajun seasoning. You can also always adjust the spice level based on your preference by adding/subtracting the Cajun seasoning.

Something about 'chicken tinga' sounded intimidating to make (just me?), but this recipe is quick and easy. If you don't know, chicken tinga is usually used in tacos or piled on tostadas; it's shredded chicken with onions in a chipotle/tomato sauce. I usually put it on tostadas with shredded lettuce and queso fresco.


Okay, this one is pretty healthy, but oh so yummy and has a super quick and easy cleanup! Olive oil and herbs mixed with chicken breasts and veggies get plopped onto a piece of foil, wrapped/closed with love and popped into the oven.


My mouth waters remembering this one. Soy, honey, butter - not much to say... pretty self explanatory that it'll be bursting with flavor. This is also a foil pack recipe that allows a quick cleanup.


This might involve slightly more work because you have to mix the marinade and let the chicken marinate for at least an hour. But, it's totally worth it. The chicken marinade consists of olive oil, soy sauce, pepper and hot sauce, while the potatoes are cooked in olive oil and butter.


This recipe calls for a few more ingredients than the previous recipes. It has a Tex-Mex vibe that has a lighter flavor because the dressing only consists of lime and olive oil. It's pretty much an orzo salad with some good, stand out ingredients. I've eaten it warm and cold and it's good either way! (Anyone else think orzo was rice when they first saw it?)
